My name is Stefania Fochi and I make the empanadas at Peperonata Empanadas. I began making empanadas with my mom before my age hit the double digits. From a young age I showed a strong interest in the kitchen, only growing stronger by the time I had to choose a career while choosing collages. I decided I wanted to stay close to the family business in food by getting a Culinary Arts degree at Keiser University. Here I learned how to cook in a professional setting, and how to cook well. Getting this degree really inspired me to strive to produce the best food my hands are capable of. After reaching a platform at my kitchen job of a couple of years, I decided to go into business for myself. I followed my dream of letting my hands put out great food... In the form of Argentinian Empanadas!! Now I have received a Small Business Management and Entrepreneurship degree from the University of Phoenix. These are just baby steps in my ultimate goal of taking over the world.... One empanada at a time!
There are a few reasons why my empanadas are special. First, the dough is made fresh from scratch on a weekly basis. The dough is crucial to the dignity of any empanada, and one can always tell if it is made from scratch or not. My dad spent three years perfecting this dough to the point where it is a deliciously perfect recreation of the dough used in Argentina.
Another reason my empanadas are special is because all of the ingredients I use are fresh. I don't use a single pre-fabricated filling. Amongst some of the most important lessons I learned in culinary school are the following: Flavor is relative to the freshness of the ingredients, therefore the fresher; the better! Also, one must respect the food in order for it to reach its full potential. In addition to using and respecting fresh ingredients, I respect Argentinian tradition by using real Argentinian flavors and recipes. I have taken each recipe and made it my own, transforming each filling to the best it can be. Lastly, my empanadas are special because each and every one is made with love. :)
